Ive been seeing all kinds of lasagna roll ups on Pinterest
(Im am OBSESSED with Pinterest) so I decided to put another spin on it.
We have
tacos all the time but I wanted something a little different. I must say they
were pretty tasty and pretty simple to make. There is no I repeat NO reason to
buy those little taco seasoning packs ever again. You probably have the
ingredients to make your own right in your cabinet. So get out those measuring
spoons and get ta mixin!

Ingredients:
4 tbsp. chili powder
3 tbsp. plus 1 tsp. paprika
3 tbsp. ground cumin
1 tbsp. plus 2 tsp. onion powder
1 tsp. garlic powder
¼ tsp. cayenne pepper

Preparation Instructions:
Combine all ingredients in a bowl, and mix well to blend. Store in an airtight container until ready to use.

For the
Mexican Lasagna Roll Ups
1 ½ Ground
Turkey
3 ½ Tbs
Taco Seasoning
1 14oz Can
Of Diced Tomatoes
8oz Cream
Cheese
12 Lasagna
Noodles
2 Cups
Mexican Blend Cheese
2 Cups
Salsa
Sour Cream
(optional)
Heat salted water to a cook 12 noodles
according to package directions. Drain and lay out on parchment paper so they don’t
stick to each other.
Brown
turkey in pan (do not drain). Add taco seasoning and tomatoes and stir. Add
cream cheese and stir until fully combined season with salt and pepper. Allow
to simmer for 10 minutes.
Spread ½
cup salsa at the bottom of your casserole dish. Lay out noodles and spread 1/3
cup of meat mixture and 2 big pinches of cheese on each. Roll up and place in
dish seam side down. Top with remaining salsa with cheese on top. Bake for 20
minutes.
