Mexican Lasagna Roll Ups

Mexican Lasagna Roll Ups

Ive been seeing all kinds of lasagna roll ups on Pinterest (Im am OBSESSED with Pinterest) so I decided to put another spin on it.

We have tacos all the time but I wanted something a little different. I must say they were pretty tasty and pretty simple to make. There is no I repeat NO reason to buy those little taco seasoning packs ever again. You probably have the ingredients to make your own right in your cabinet. So get out those measuring spoons and get ta mixin!

2 Cups Mexican Blend Cheese
2 Cups Salsa

Heat salted water to a cook 12 noodles according to package directions. Drain and lay out on parchment paper so they don’t stick to each other.

Spread ½ cup salsa at the bottom of your casserole dish. Lay out noodles and spread 1/3 cup of meat mixture and 2 big pinches of cheese on each. Roll up and place in dish seam side down. Top with remaining salsa with cheese on top. Bake for 20 minutes.
